The secret: a new machine that he has helped to develop which doesn't just steam but also simultaneously pan-roasts the raw leaf, creating this rich, nutty flavor profile.

About the name: Kurumy - in Japanese it means "walnut" 胡桃 because my first impression of the flavor was a delicious nutty and bitter flavor that reminded me of walnuts.
